IRISH SODA BREAD
Ingredients:
2 cups all-purpose flour (remember to measure carefully!)
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
3 tablespoons margarine
1 slightly beaten egg white
¾ cup buttermilk (hint: this could be substituted with soured milk. Put 1 tablespoon lemon juice in measuring cup, fill up with the required amount of milk. Let stand for 5 minutes. This will work just as well.)
Nonstick spray coating
¼ cup raisins (optional)
In a medium mixing bowl, stir together flour, baking powder, soda and salt. Cut in margarine till mixture resembles coarse crumbs. Make a well in the center of mixture. In small mixing bowl, combine egg white and buttermilk. Add all at once to dry mixture. Stir just till moistened. Do not overmix! Mix in raisins. On a lightly floured surface, knead dough 10 to 12 times till nearly smooth. Shape into a ball. Spray baking sheet or 1 quart casserole dish with nonstick cooking spray. Place bread dough on sheet or in casserole. With sharp knife, make 2 slashes in top to form an X. Bake in 375 degree oven about 30 minutes until golden brown.
