PANCAKES
Ingredients:
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1 egg
1 ½ cups milk
3 tablespoons melted butter or margarine (do this first and let it cool)
½ teaspoon vanilla
Mix together flour, baking powder, salt and sugar. Mix with electric mixer. Beat egg in small bowl on high speed 1 minute. Add milk. Pour over dry ingredients. Beat on low speed only until blended, scraping bowl. Do not overbeat. Quickly blend in melted and cooled margarine and vanilla. Bake in preheated frying pan turning once to brown both sides.
Cornmeal pancakes:
Substitute ¾ cup yellow cornmeal for ¾ cup flour in the recipe.
Apple pancakes:
Mix ½ teaspoon cinnamon with flour, add 1 cup finely chopped pared cooking apple.
Banana pancakes:
After pouring batter for each cake, place 3 to 4 thin slices of banana on each pancake, Bake and turn as usual. Brush with melted butter, sprinkle with sugar and cinnamon.
