COWBOY COFFEE CAKE
Ingredients:
2 ½ cups all-purpose flour
2 cups packed brown sugar
½ teaspoons salt
2/3 cup shortening
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup sour milk (1 tablespoon lemon juice or vinegar in measuring cup with enough milk to make 1 cup. Let stand for 5 minutes.)
2 beaten eggs
1/3 cup chopped nuts
In mixing bowl, stir together flour, sugar and salt. Cut in shortening until mixture resembles coarse crumbs. Reserve ½ cup mixture for topping. To remaining crumbs add baking powder, soda and spices. Mix well. Add milk and eggs. Mix well. Turn into 2 greased and floured 8 x 1 ½ or 9 x 1 ½ inch round baking pans. Combine the ½ cup reserved crumbs and nuts, sprinkle over batter. Bake at 375 degrees for 20 to 25 minutes. Serve warm. Makes 2 coffee cakes.
